Disable Quick Access

You can customize Quick Access only to show you pinned files and folders. Recent and frequently Accessed files and folders will not automatically be added to Quick Access.

Open Windows File Explorer, click the View tab, and select Options. 

Choose the option to Open File Explorer on This PC. Then, clear the checked boxes in the Privacy section and select Apply.

This disabled Quick Access in Windows.

Pin, Remove Customize Quick Access

 You can set a folder to show up in Quick Access so it’ll be easy to find. Just right-click it and select Pin to Quick Access. 

Unpin it when you don’t need it there.

You can customize Quick Access to only your pinned folders and turn off recent files or frequent folders automatically added to Quick Access.

Open Windows File Explorer, click the View tab, and select Options. In the Privacy section, clear the check boxes and select Apply. 

Now Quick Access will only show your pinned folders.

You can remove items from Quick Access. If your document shows up in Quick Access that you don’t want to see again, right-click it and select Remove from Quick Access. 

That should do it!
